What are edible ices

Before the industrial revolution, ice (frozen water) was about the only available means to cool food and drinks and was used to extend the keepability of perishable goods and to provide a pleasurable "cooling" eating sensation.

The qualification "edible" refers to ice made from potable water and this is a major constituent of an ice delicacy meant for (safe) human consumption.
"Edible ices" is therefore understood as common terminology for products such as water ice, ice cream, milk ice, dairy ice cream, fruit ice, sorbet and any similar foods such as iced smoothies and products of which edible ice is a component and that are consumed in their frozen state.
